Mexican Mind Meld

Serves 8

30 minutes or fewer

This spicy drink offers the satisfaction of rich, creamy guacamole without the calorie-packed chips.
  • 1 large cucumber, sliced (10 oz.)
  • 1 avocado, pitted and skinned
  • ½ cup loosely packed cilantro leaves
  • 2 green onions, sliced
  • 2 Tbs. fresh lime juice
  • 1 jalapeño chile, seeded and sliced
  • 1 clove garlic, sliced
  • 1 tsp. salt

Purée cucumber and 1 1/2 cups cold water in blender until smooth. Add remaining ingredients, and purée until smooth.

i don't want to drink my guacamole, i want to dip chips in it. i love the veg community but sometimes i wish it was more like my southern roots - accepting and loving of big booties and people who aren't afraid to EAT SOME FREAKIN CHIPS!

This is overall a good recipe. However, it seemed more like tomato-less gazpacho than drinkable guacamole. So, I doubled the garlic (and possibly 1-2 add'l cloves would be good), added black pepper, a little more salt and some chunks of stale bread. It is really refreshing on a hot summer day.
