Mojo Chili Marinade

1 Cup

In food processer or blender, combine all ingredients, and process until smooth and well blended. Pour marinade into large bowl. Add vegetables or other foods to be marinated, turning to coat. If preparing ahead, store in airtight container in refrigerator up to three days. Stir well before using.
  • 2 tsp. grated orange peel
  • ½ cup orange juice
  • 1 Tbs. fresh lime juice
  • ⅓ cup olive oil
  • ¼ tsp. salt
  • ¼ tsp. freshly ground black pepper
  • 1 Tbs. chili powder
  • 1 Tbs. minced garlic
  • 2 Tbs. minced onion

This is a wonderful marinade! My wife and I used this for vegetable fajitas, and the result was delicious. Very fresh with the citrus elements, but also a perfect level of heat and flavor with the spices, garlic and onion... I can imagine this would be a great marinade as well for grilled shrimp, or scallops, or pork...
