Okra and Onions

"If you think you don't like okra, try it Indian-style. The spices in this recipe enhance okra's flavor" says Gadia.



Ingredient Line: 
2 Tbs. canola or vegetable oil
Ingredient Line: 
½ tsp. whole cumin seeds
Ingredient Line: 
1 medium onion, chopped (1½ cups)
Ingredient Line: 
12 oz. frozen sliced okra, thawed
Ingredient Line: 
2 tsp. ground coriander
Ingredient Line: 
¾ tsp. salt
Ingredient Line: 
½ tsp. ground turmeric
Ingredient Line: 
½ tsp. cayenne pepper, or to taste
Ingredient Line: 
½ tsp. amchoor or 1 tsp. lemon juice
Ingredient Line: 
½ tsp. sugar


Heat oil in skillet over medium heat. Add cumin, cook 10 seconds. Add onion, sauté 3 minutes. Stir in okra, then coriander, salt, turmeric, and cayenne pepper. Cover, and cook 10 minutes, stirring once or twice. Stir in amchoor and sugar.

Excellent recipe! Perfect with quinoa and whole wheat tortilla.

I have always been cautious of okra...the texture gave me the creeps, but this recipe was delicious! I will be making this many times over. Thanks for a new perspective on okra!

I agree with Ashley's comment. Okra is typically slimy, but cooked this way it was perfect. I cooked mine longer and let the onions caramelized and it enhanced the overall flavor. Definitely in my recipe box now!

I was browsing recipes and this sounds exactly like what my friend from India made for me last week. It was the first time I had tasted okra, and it was delicious!

Can't find frozen okra anywhere. Any suggestions?
