Parsley-Garlic Crème
Serves 6 (makes 2/3 cup)
Dollop this sauce atop Mediterranean Terrine slices, or pass it around the table in a small bowl so guests can serve themselves.
- 2 cups flat-leaf parsley leaves
- ¼ cup olive oil
- 2 Tbs. red wine vinegar
- 1 large clove garlic, peeled
- 1 tsp. salt
- 1 pinch red pepper flake

It's almost like a pesto. I would think it could stay in the fridge a week or more, and be frozen for up to 6 months in a freezer-safe container.
