- 4 cups peeled and quartered baking potatoes (about 4 medium)
- 1 medium-sized onion, quartered
- ½ 12.3-oz. pkg. lite silken tofu
- ¼ cup nutritional yeast
- 2 ½ Tbs. whole wheat flour
- 2 Tbs. whole grain yellow cornmeal
- 1 Tbs. egg replacer powder
- 1 tsp. baking powder
- 1 tsp. sea salt
- ½ cup unflavored soymilk
- ½ cup mashed potato flakes
- 1 Tbs. olive oil
