Piña Coladas

Replacing coconut cream with sorbet in these tropical treats cuts the fat to just 1g per serving.

2 cups pineapple juice

⅔ cup coconut sorbet

½ cup dark rum

4 tsp. lime juice

Instructions: 

  1. Freeze pineapple juice in ice cube trays 4 hours, or until solid.
  2. Blend frozen pineapple juice, 1 cup ice cubes, coconut sorbet, rum and lime juice in blender until smooth. Serve immediately.
