Pineapple-Lime Smoothie

1 cup fresh or frozen pineapple chunks

2 Tbs. mint leaves

¼ tsp. grated fresh ginger

6 oz. non-fat Greek yogurt

1 Tbs. chia seeds
Ingredient Line: 
2 tsp. honey (optional)

Instructions: 

Purée pineapple chunks with mint leaves, lime juice, and ginger in blender until mint is finely chopped. Add Greek yogurt, and blend until smooth. Stir in chia seeds and honey (if using). Let stand 5 minutes to thicken.

Good but very tart! If your taste buds run on the sweeter side, you may want to do a little adjustment or add a sweeter fruit...strawberries? Banana maybe? I will make this again but will do a slightly sweeter tweak!

I used ground flax instead of chia seeds and added kale and blueberries. Good! With my additions, it was a pretty teal with blue speckles.
