Pomegranate Cheesecake*

POMEGRANATES ENHANCE THIS CLASSIC.
Crust
- 1 cup graham cracker crumbs
- 2 Tbs. granulated sugar
- ¼ cup unsalted butter
- 2 8-oz. containers whipped cream cheese
- 3 large eggs
- ½ cup granulated sugar
- 2 Tbs. Grand Marnier
- ½ tsp. finely grated orange zest
- 1 ½ Tbs. cornstarch
- 3 Tbs. plus ½ cup pomegranate juice
- 2 Tbs. granulated sugar
- 1 ½ cups pomegranate arils

This is the simplest most amazing cheesecake you could ever hope to make! When I can't find pomegranate in the supermarket, I use fresh blueberries and the pomegranate juice mixture. Comes out delicious every time.
