Quick Pizza Sauce

Makes 1 cup (enough for 1 12-inch pizza)

30 minutes or fewer

To avoid possible exposure to gluten from prepared tomato sauces, whip up this easy version that can be made with ingredients you probably have in your pantry.
  • 1 6-oz. can no-salt-added tomato paste
  • 2 Tbs. finely minced onion
  • 2 cloves garlic, minced (2 tsp.)
  • 2 tsp. dried oregano
  • 2 tsp. olive oil
  • ½ tsp. red wine or red wine vinegar

Combine tomato paste, onion, garlic, oregano, oil, and wine in small bowl. Season with salt and pepper, if desired.

My best pizza sauce (a roommate from the 80s - his grandmother was from Italy and said pizza sauce is only 4 ingreds - tomato sauce, garlic, olive oil and oregano) - she's right! Try this. Organic everything - can of tomato sauce, can of tomato paste - stir 1/2 or more of the tomato paste into 3/4 or so of sauce to thicken and sweeten slightly - Put in glass jar with lid (I use recycled organic PB jar, salsa, etc. - Put mix in jar. Pour in about an inch of olive oil on top - it will float. Chop up garlic cloves to small chunks and submerge in oil. Finger grind dried oregano leaves (or fresh if you have it) and also submerge in oil. Leave on counter for hours. Do not refrigerate and do not cook! The garlic and oreg will infuse their flavors into the oil - even swirl the oil gently but don't mix yet! Several hours later and time to make the pizza? - shake wildly till your arms are tired.
