Quick Walnut Pâté Sandwiches with Pears and Arugula

Makes 8 sandwiches

30 minutes or fewer

Pears add a sweet, juicy crunch to sandwiches—try them in place of tomatoes or other veggies.
Walnut Pâté
  • 1 cup walnut pieces
  • 1 ½ cups cooked cannellini beans or 1 15-oz. can cannellini beans, rinsed and drained
  • 2 Tbs. lemon juice
  • 2 cloves garlic, minced (2 tsp.)
  • 2 tsp. olive oil
Sandwiches
  • 16 slices whole-grain bread
  • 4 large jarred roasted red bell peppers, rinsed, drained, and halved
  • 2 large Anjou, Bartlett, or Concorde pears, peeled and sliced
  • 2 cups baby arugula

1. To make Walnut Pâté: Preheat oven to 350°F. Spread walnuts on baking sheet, and toast in oven 7 to 10 minutes, or until browned, shaking pan occasionally.

2. Transfer walnuts to bowl of food processor; add beans, lemon juice, garlic, oil, and 1/4 cup water. Purée until smooth. Season with salt and pepper, if desired.

3. To make Sandwiches: Spread each of 8 bread slices with 3 Tbs. Walnut Pâté. Top each with red bell pepper half, 2 pear slices, and 1/4 cup arugula. Spread remaining 8 bread slices wih 1 Tbs. Walnut Pâté. Place on top of sandwiches.

Overall I really liked it, although I found the raw garlic flavor to be a bit harsh for my taste. Next time I will lightly saute the garlic in the olive oil to sweeten it's flavor prior to adding to the blender.

Awesome! I love everything about this. And, there is never enough garlic for me. It's a good idea for people to adjust according to their own personal tastes.

super yummy and fresh. even my 4 year old will eat it. i didn't have a can of white beans this time around and used garbanzo instead, which came out delicious. i agree to the comment about using as a cracker spread or dip, or on a crostini.

Really good and quick to make. I make the whole recipe and just save the patte and use it all week on sandwiches and even with veggies/crackers. I did add salt and pepper and a bit of paprika to the patte to give it more flavor. Overall really good!

A perfect quick, healthy lunch. I love crunchy sandwiches and dislike the bitter, salty taste of canned peppers so I used fresh instead. Yum.

Nice recipe. However, when I make it again, I will omit the garlic. I only used half of the amount that was recommended, and I thought it was too overpowering.

We loved this recipe! We took it to a meeting and they were gone in minutes. I think that a little bit of strong cheese would be amazing but it is great as is. I would definitely make this again.

YUM. I made this for lunch today. My mom loved the pate as well, she suggested using it for a vegetable or crusty bread dip. I followed the recipe exactly, turned out great! I am in love with roasted walnuts now, they add such great flavor.

This was delicious. I had no idea what a pate is, so for those who don't know, this turns out a lot like hummus with walnuts in it. My two year old loved it, and me and my husband (neither of us are vegetarian) enjoyed it. I used raw bell peppers, which worked out nicely. Got to make this again!
