Red Cabbage Salad with Pears and Walnuts

Red Cabbage Salad with Pears and Walnuts

Serves 6

30 minutes or fewer

Think cabbage salad has to be a slaw? Think again. Thinly sliced cabbage heads make a crunchy alternative to lettuce. This salad should be served as soon as it is made so the cabbage retains its vibrant color. To make pomegranate syrup, simmer 1 cup pomegranate juice with 2 Tbs. sugar and 1 Tbs. lemon juice over medium heat 1 hour, until thick.
  • 1 Tbs. plus ½ tsp. red wine vinegar
  • 1 Tbs. grape seed oil
  • 2 tsp. pomegranate syrup
  • 1 tsp. Dijon mustard
  • ½ head red cabbage, cut in half, cored, and very thinly sliced (4 cups)
  • 1 Bartlett pear, cored and sliced
  • ½ cup toasted walnut pieces
  • ⅓ cup thinly sliced red onion

1. Whisk together vinegar, oil, pomegranate syrup, and mustard in small bowl. Set aside.

2. Toss together cabbage, pear slices, walnuts, and red onion in serving bowl. Add dressing, and toss to coat. Season with salt and pepper, if desired.

Geez, for 125 grams of carbs, I'll have cake instead.

Made this today with a couple substitutions due to dietary restrictions, came out great! I'm vegan and always looking for cool salad ideas beyond the usual stuff. Thanks for the recipe!:)

I tried this recipe with a minor variation of using balsamic vinegar instead of the pom syrup and it was very good. I have blogged about it too here: http://www.vegcorner.com/red-cabbage-and-pear-salad-recipe/

I was craving a fresh crisp salad this week. This recipe hit the spot. The children and I made up the pomegranate syrup as suggested. It was so hard to not eat it up! My middle son declared he wanted to eat it on pancakes. :) The sweet and sour flavors in this is so yummy. My hubby will melt at first bite when he comes home tonight from work. My middle son and I are finding it hard to not eat his!

Hi, I think this looks good, and I'm trying it with dinner tonight. I'm pretty sure the carbs listed is too high. Maybe its supposed to be 12.5 g per serving? Thanks
