Red Lentil Soup with Curry and Coconut Milk

This velvety smooth soup is especially suited as a light meal with brown rice and vegetables.

Ingredient Line:
3 Tbs. vegetable oil
Ingredient Line:
2 medium onions, chopped (2 cups)
Ingredient Line:
1 cup red lentils
Ingredient Line:
3 medium carrots, peeled and roughly chopped (1 cup)
Ingredient Line:
14-oz. can coconut milk
Ingredient Line:
1 bay leaf
Ingredient Line:
3 cloves garlic, minced
Ingredient Line:
1-inch piece fresh ginger, minced
Ingredient Line:
1 Tbs. curry powder, preferably hot
Ingredient Line:
½ cup chopped cilantro

  1. In medium saucepan, heat 2 Tbs. oil over medium heat. Add onions, and cook, stirring often, until onions start to brown, about 10 minutes. Add 4 cups water, lentils, carrots, coconut milk, 1 tsp. salt and bay leaf. Cover, and bring to a boil. Reduce heat, and simmer, partially covered, until lentils are tender, about 20 minutes.
  2. Meanwhile, in small skillet, heat remaining 1 Tbs. oil over medium heat. Add garlic, ginger, curry powder and cilantro. Cook, stirring often, until fragrant, about 2 minutes. Add to soup.
  3. Remove bay leaf. In food processor or blender, puree soup in batches until velvety smooth. Taste, and add a bit more salt if desired. Serve hot.

The soup looks great and I am going to service it cold, its also easy to make which I love lets hope my guests like it.

This soup is velvety, rich, and flavorful. I will certainly make it again. I am going to try substituting the water for vegetable broth next time.

This was my first time making anything like this, or a soup for that matter. I'm newly married and am trying to be a good cook! hahah... so, I tried this and it's great! I love it and my husband loved the richness it had. The ginger combined with the garlic and cilantro, I never would have thought it would have smelled so good! and the curry set it all of Indian style lol... thanks! Will definitely make again. ps) I added a teensy bit more salt too

Soup was tasty, no need to puree it and make more dishes! Easy to make, a real crowd pleaser.

sounds good

Great soup and so easy to make!! My kids loved as well

Sounds delicious. I too will substitute veg. broth for the water.

This is close to one I used. Didn't have carrots so omitted them.

Delicious!! Made it for breakfast today!

My mom and i have made this a few times over the years and i have been hit by a sudden craving. Glaf i found the recipe again! Love this one.

please add the water to the ingredients list, I nearly burnt the milk + lentils to bottom of pan!

I added a sweet potato and doubled the ginger root. Tastes great!

absolutely delicious!!

This was a great way to use up all my ingredients! Once pureed and refrigerated, it becomes really thick. And the cilantro makes it seem like guacamole. So I've been eating it cold as a dip for chips or veggies. It's awesome!
