For a make-your-own meal, nothing beats baked potatoes with all the fixings. Set the table with sweet potatoes cooked in the microwave and the following toppings for a healthful feast the whole family will love. 
  • 1 cup part-skim ricotta cheese
  • 1 cup chopped baby spinach
  • ⅓ cup golden raisins
  1. Combine all ingredients in bowl.

Served this with the butterbean topping. I added a little sauteed onion to this, nutmeg and pepper.
