Roasted Red Pepper Sauce
Makes 2 1/2 cups
30 minutes or fewer
Serve this quick, healthful dipping sauce with Crispy Quinoa Cakes.
- 1 ½ cups roasted red peppers, drained
- ½ cup toasted almonds
- 1 clove garlic
- 2 tsp. red wine vinegar

This sauce is OK - but to get it smooth, I had to transfer it from my food processor to my vitamix, add oil and water and even a dab of hummus. I think the red wine vinegar is overkill. Going to try this again later without the vinegar.
