Roasted Red Pepper Sauce

Makes 2 1/2 cups

30 minutes or fewer

Serve this quick, healthful dipping sauce with Crispy Quinoa Cakes.
  • 1 ½ cups roasted red peppers, drained
  • ½ cup toasted almonds
  • 1 clove garlic
  • 2 tsp. red wine vinegar

Purée all ingredients in food processor.

Should've read Ruth Guin's review first. I used sliced almonds and couldn't get this to purée in a food processor (a powerful one too)!

could you substitute the Almond for something else? allergy :(

This sauce is OK - but to get it smooth, I had to transfer it from my food processor to my vitamix, add oil and water and even a dab of hummus. I think the red wine vinegar is overkill. Going to try this again later without the vinegar.
