Smokey Eggplant Spread

Smoked eggplant and lightly caramelized onions come together for a tasty spread that’s perfect on summer sandwiches. You can also serve it as a dip with whole-wheat pita chips or chunks of bread.

Ingredient Line:
1 ¾ Tbs. hickory or maple chips
Ingredient Line:
2 Tbs. salt
Ingredient Line:
1 small Italian eggplant, cut into½-inch-thick slices (14 oz.)
Ingredient Line:
1 ½ Tbs. olive oil
Ingredient Line:
½ medium yellow onion, finely diced (⅔ cup)
Ingredient Line:
1 clove garlic, minced (1 tsp.)
Ingredient Line:
2 Tbs. chopped parsley
Ingredient Line:
1 Tbs. lemon juice

1. Prepare stove-top smoker with wood chips.

2. Sprinkle fine layer of salt on baking sheet. Place eggplant slices on salt, and salt eggplant tops. Let stand 15 minutes.

3. Rinse eggplant slices under cold water, and pat dry. Arrange eggplant slices on smoker rack (it’s OK if they overlap slightly). Smoke eggplant slices 25 minutes, or until tender. Remove from heat, leave covered, and cool to room temperature.

4. Meanwhile, heat oil in small skillet over medium heat. Add onion and garlic, and cook 10 minutes, or until onion is tender and lightly browned, stirring occasionally.

5. Chop cooled eggplant to coarsely puréed texture. Transfer to bowl, and stir in onion and garlic, parsley,
lemon juice, and hot sauce. Season with salt and pepper, if desired. Serve immediately, or refrigerate up to 2 days.

Thanks, I'm going to try that, Adél!

Here ,in Romania we prepare eggplants differently. We actually roast the eggplants in whole and then peel them while still hot (we hold them by their stalk and use a plastic knife for help). Then we make sure that they are clean from all the burnt brownish stuff and then chop them up using a special plastic knife. We add oil, grated onions or garlic, salt and a bit of vinegar, lemon juice or citrate. It's called vineta salad and it's very delicious!

I wonder if this freezes well. I want to grow eggplant next season and this sounds like a great way to put up some of the summer garden's bounty.
