Southern Peaches with Pecan Shortbread

Southern Peaches
- 9 large, ripe peaches, peeled
- 2 Tbs. granulated sugar, or to taste
- ⅛ tsp. salt
- Juice of ½ lemon
- 1 cup (2 sticks) cold unsalted butter, cut into small pieces
- 2 cups sifted all-purpose flour
- ¼ cup granulated sugar plus extra for sprinkling
- ½ tsp. salt
- ½ tsp. vanilla extract
- ½ cup chopped pecans
- 1 cup heavy cream, chilled
- 2 Tbs. granulated sugar
- 1 tsp. vanilla
- ¼ tsp. almond extract
