Spiced Cilantro Dressing

Makes 3/4 Cup

30 minutes or fewer

This zesty green garnish transforms the tagine from a nice dish to a knockout. Since the sauce will keep up to a week in the fridge, try doubling or tripling the recipe so you can use it on sandwiches, salads, roasted vegetables, simple grain dishes—let your imagination run.
  • 2 Tbs. olive oil, preferably extra virgin
  • 1 tsp. ground cumin
  • ½ cup finely chopped cilantro
  • 1 Tbs. fresh lemon juice
  • 1 clove garlic, minced
  • ¼ tsp. salt
  • ¼ tsp. cayenne pepper
  1. Heat oil and cumin in small skillet over medium-low heat. Cook about 2 minutes, or until cumin is fragrant. Transfer to small bowl, and stir in remaining ingredients. Serve as topping for tagine.
