Spicy Corn Chowder

Florida-based reader Lisa New came up with this comforting corn chowder on a chilly winter day. Chipotle chiles add meaty texture and smoky heat, but feel free to use less for a milder soup.



Ingredient Line: 
2 Tbs. olive oil
Ingredient Line: 
½ medium onion, diced (¾ cup)

1 stalk celery, diced (⅓ cup)

2 small yellow-flesh potatoes, diced (2½ cups)

1 10-oz. pkg. frozen
Ingredient Line: 
½ chipotle chile in adobo sauce, diced
Ingredient Line: 
1 bay leaf

2 cups low-sodium vegetable broth
Ingredient Line: 
½ 13.5-oz. can coconut milk (¾ cup)
Ingredient Line: 
1 Tbs. chopped fresh parsley


1. Heat oil in large, heavy saucepan over medium heat. Add onion and celery, and sauté 5 minutes, or until soft.

2. Add potatoes, corn, chipotle chile, and bay leaf, and cook 10 minutes, stirring frequently. Add broth, and bring to a boil.

3.Reduce heat to medium-low, and simmer 10 minutes, or until vegetables are tender. Stir in coconut milk and parsley, and season with salt and pepper, if desired.

Quite tasty! I modified it a bit for what I had on hand, (grilled green chiles and a vegetable medley instead of just corn.) I will definitely make it again.

Loved this!!! I accidentally mis-read the ingredients and threw in TWO 10-oz packages of corn (so double the amount)... but honestly... I think it was a mistake for the better! so good! It didn't last long in my household of 2.... less than 24 hours actually. this recipe will be a great go-to.

I made this almost exactly to the letter, I just added an entire coconut milk can and a bit extra adobo sauce and squeeze of lemon juice. This was super easy and is absolutely DELICIOUS! Definitely will make this again. It's perfect with lots of fresh ground pepper on top. Thank you! mmmmm

Followed the recipe exactly and it was fabulous! I have made this several times and my husband and I enjoy it more each time.

This was very, very good. As written I thought it was a bit dry (I might have simmered too long!) so I ended up adding more stock and coconut milk. I also blitzed it with an immersion blender to make it a thicker, creamier consistency. The flavors were even better the next day---definitely will make again!!! Thank you!
