Spicy Orange Slaw

Sweet orange juice concentrate and tangy lime juice create a richly flavored dressing base with zero fat. Roasted pumpkin seeds, also known as pepitas, can be found on Mexican dry-goods displays in most supermarkets.



Ingredient Line: 
2 cups packaged grated carrots
Ingredient Line: 
2 cups packaged shredded purple cabbage
Ingredient Line: 
½ cup chopped cilantro
Ingredient Line: 
¼ cup roasted pumpkin seeds
Ingredient Line: 
3 Tbs. thawed frozen orange juice concentrate
Ingredient Line: 
1 Tbs. fresh lime juice
Ingredient Line: 
½ tsp. ground cumin
Ingredient Line: 
¼ tsp. cayenne pepper
Ingredient Line: 
¼ tsp. coarse salt


Combine all ingredients in medium bowl, and toss well to mix.

Looks good, except I loathe cilantro. (Got the "soap gene" that makes cilantro taste to about 20% of European-descended adults like biting into a big bar of Irish Spring. Even the smell makes me queasy.) So I'm thinkin' one of the basil tribe, or better yet, shiso (perilla), the basil/mint/cinnamon-tasting leaves used as a sushi garnish.

Nutritional comments would be a great addition.
