Strawberries-and-Cream Pancakes

Because pancakes don’t require a lot of blending or cooking time, the batter can be made with just one gluten-free flour instead of a combination of flours.
Strawberries-and-Cream Topping
- 1 cup frozen strawberries, thawed
- 1 cup low-fat vanilla yogurt
- ½ cup skim milk
- 1 cup white rice flour
- 2 Tbs. brown sugar
- 1 Tbs. baking powder
- ½ tsp. ground cinnamon
- ¼ tsp. ground nutmeg
- ¼ tsp. salt
- 1 egg
- 1 cup skim milk
- 1 Tbs. canola oil
- 1 tsp. vanilla extract
