Sweet Lady Jane?s Almost Flourless Chocolate Cake
SERVES 8 TO 10
Jane Lockhart uses top-quality chocolate to make this fudgy, toothsome treat. She garnishes it with strawberries, but you could substitute almost any seasonal fruit with good results. You can make the cake up to 1 day in advance.
- 1 ½ lb. semisweet chocolate, chopped
- 1 cup (2 sticks) unsalted butter, cut into small pieces
- 6 large eggs, separated
- 1 ½ Tbs. all-purpose flour
- 1 ½ Tbs. granulated sugar
- 1 cup heavy cream, whipped
- Sliced or quartered strawberries for garnish
