Sweet Potato Bourbon Pie

Pumpkin pie may be a holiday dessert, but similarly-seasoned sweet potato pie is a beloved Southern specialty year-round. And if you want to take some of the guilt out of indulging in this dessert, just tell yourself a slice takes care of almost 100 percent of your daily vitamin A needs.



Ingredient Line: 
2 cups cooked, pureed orange-fleshed sweet potato, such as Beauregard, garnet, or jewel

¾ cup packed light brown sugar

¼ cup all-purpose flour

2 Tbs. bourbon

½ tsp. pumpkin pie spice

3 large eggs

1 9-inch whole-wheat frozen pie shell

2 Tbs. chopped toasted pecans


1. Preheat oven to 350°F. Whisk together sweet potato, brown sugar, flour, bourbon, pumpkin pie spice, salt, and eggs in large bowl until smooth. Pour into pie shell. Sprinkle with pecans.

2. Place on rimmed baking sheet. Bake 50 minutes, or until center is set. Cool on wire rack.

Baking your sweet potatoes in the oven will give them greater depth of flavor.

Does the alcohol content disappear or disolve? This recipe sounds delicious, but it's super important the alcohol content MUST be zero. Thank you for a swift response. Mike

Why am I asked to include "cooked" sweet potato with no indication as to HOW it is to be cooked? Baked, boiled, huh?

Baked or boiled would work, just toss the skins and use the softened insides.

Peel the sweet potatoes, cut into chunks and place in a microwave steamer. Add some water in the dish, place the potatoes in the steamer and microwave for about 10 - 15 minutes or until done. Check for doneness by piercing the chunks with a skewer. Rest a while and then puree the chunks in a food processor.

What can I use in place of bourbon for a high school culinary class?

You can substitute 1 tsp vanilla for 2 Tbs bourbon

How can I make this vegan?

I used applesauce as an egg substitute - the taste was exquisite and the look beautiful (I think the applesauce enhanced the flavor but it wasn't conspicuous at all). It wasn't set when I took it out of the oven but I left it out in foil and the next morning it was set. However, it was a little on the flat side so maybe some baking powder would be in order to help it rise a little more.
