Sweet Potato Fritters with Peach Salsa

Incorporating a new recipe at every meal is a challenge Sharman Schubert made these fritters when trying to re-create a meal she had on a trip to Antigua. 3rd Place, 2006 recipe contest.

Ingredients:

2 fresh peaches, peeled and diced (about 1 cup)
Ingredient Line: 
4 green onions, finely chopped

1 jalapeno pepper, seeded and diced

2 Tbs. chopped cilantro
Ingredient Line: 
1 Tbs. fresh lime juice
Ingredient Line: 
½ tsp. lime zest

Lime Sauce

Ingredients:

1 cup low-fat sour cream
Ingredient Line: 
2 Tbs. lime juice
Ingredient Line: 
1 tsp. finely grated lime zest
Ingredient Line: 
1 tsp. chipotle hot sauce

Ingredients: 

Ingredient Line: 
1 40-oz. can sweet potatoes, drained
Ingredient Line: 
1 medium onion, diced (about 1 ¼ cups)
Ingredient Line: 
½ medium green bell pepper, chopped (about ¾ cup)
Ingredient Line: 
½ cup breadcrumbs
Ingredient Line: 
1 large egg, lightly beaten
Ingredient Line: 
¼ tsp. chopped fresh thyme
Ingredient Line: 
¼ tsp. ground black pepper
Ingredient Line: 
4 Tbs. peanut oil

Instructions: 

1. To make Peach Salsa: Combine all ingredients in bowl.

2. To make Lime Sauce: Combine all ingredients in bowl.

3. To make Fritters: Mash together sweet potatoes, onion, bell pepper, breadcrumbs, egg, thyme, and pepper in bowl. Shape into 3-inch patties.

4. Heat 2 Tbs. oil in skillet over medium heat. Fry patties 4 minutes on each side, or until brown, using more oil as needed. Drain on paper towels. Serve with Peach Salsa and Lime Sauce.

These r good.

i'm in love! super good... just made my patties a little too thick. makes about 8-10 patties depending on thickness. peach salsa and lime sauce are excellent additions to this dish... don't skip them and just make the patties!

Just made them! One of the best dinners I've had in awhile! :)

My future son-in-law made this with my help and it was delicious. We cheated and used can peaches. Still very good. Probably using fresh , just adds an added crunch.

I love this recipe, but whenever I make it the fritters just don't stay together. Is there something I can do to make the mixture more solid?
