Sweet Potato Supper

For a make-your-own meal, nothing beats baked potatoes with all the fixings. Set the table with sweet potatoes cooked in the microwave and the following toppings for a healthful feast the whole family will love: Buttery Bean Topping, Tofu-Apple Topping, Ricotta and Spinach Topping, and Maple-Yogurt Topping with "Bacon" Bits.

4 medium sweet potatoes

Instructions: 

  1. Place potatoes 1 inch apart in microwave. Cook on high power 6 minutes; flip, and cook another 6 minutes. Continue to microwave in 2-minute intervals until potatoes are soft when pressed, up to 18 minutes total.

can you give us an oven version for those of us that don't think microwaves are the healthy choice? temperatures and cooking time (so that its neither under cooked nor burnt) are important for a vegetable and method like this many thanks
