Tabbouleh with Mint and Pistachios

Traditional Middle Eastern tabbouleh is more about the mint and herbs than the bulgur grains. The longer this salad sets, the better it gets, so make it up to a day ahead.



Ingredient Line: 
¼ cup fine bulgur
Ingredient Line: 
3 Tbs. lemon juice
Ingredient Line: 
¼ tsp. honey
Ingredient Line: 
1 ⅓ cup finely chopped pistachios
Ingredient Line: 
1 cup finely chopped curly parsley
Ingredient Line: 
1 small cucumber, finely chopped (1 cup)
Ingredient Line: 
1 medium tomato, finely chopped (⅓ cup)
Ingredient Line: 
4 green onions, finely chopped (⅓ cup)
Ingredient Line: 
⅓ cup finely chopped fresh mint
Ingredient Line: 
3 Tbs. olive oil


1. Place bulgur in large bowl and add 1/3 cup boiling water. Let stand 5 minutes. Stir in lemon juice and honey, and let stand 5 minutes more, or until all liquid is absorbed. Fluff bulgur with fork, and stir in remaining ingredients. Season with salt and pepper.

I made this recipe using Quinoa instead of the Bulgur for the extra protein it offers, being a vegetarian. It worked out great! It was extremely tasty and quite filling stuffed into a pita. Although make sure to use the directions for making the quinoa on it's box as opposed to the instructions in this recipe for making the bulgur.

My mom made this recipe for Easter and now I make it weekly because it is so wonderful. This is now one of my favorite recipes!

This is the best tabbouleh recipe around! I keep the pistachios out to sprinkle on top when serving, otherwise they get soggy and turn into bean-type things, which is ok too.. Add Chickpeas to make a delicious healthy meal!

It is a tradition indeed as you said ! :):) Loved ur recipe but u added alot of non-traditional ingredients such as honey, cucumber and pistachios! we dont usually add these ! Just wanted to point it out! Thank you! :)

I made this as a "taco" filling with grilled eggplant rounds. It was a huge hit! I love the pistachios, they really bulk it up nicely :)

What kind of mint is used? Spearmint, peppermint, or something else? I have several varieties in my garden and don't want to spoil the recipe with the wrong kind.


Love this recipe! I double the amount of bulgur wheat because I enjoy the texture, but it's my favorite way to make tabbouleh now!
