Teurgoule (Slow-Cooked Rice Pudding)

This rice pudding from Normandy was traditionally cooked in bread ovens after the baking was done. Here a slow cooker provides the same consistent low heat.
- 6 cups low-fat milk
- ⅔ cup Arborio rice
- ⅔ cup Sucanat (natural cane sugar)
- 1 tsp. ground cinnamon
- ½ tsp. salt
