Thyme-Marinated Carrots

Blanching the carrots tenderizes them and brings out their natural sugars.

Ingredients:

Ingredient Line: 
2 lb. carrots, peeled and cut into ½-inch by 2-inch strips
Ingredient Line: 
6 cloves garlic, peeled
Ingredient Line: 
2 Tbs. balsamic vinegar
Ingredient Line: 
1 ½ Tbs. olive oil
Ingredient Line: 
1 Tbs. chopped fresh thyme
Ingredient Line: 
¼ tsp. sugar

Instructions: 

1. Blanch carrots and garlic in boiling salted water 1 minute. Drain.


2. Toss carrots with remaining ingredients in large bowl. Season to taste with salt and pepper. Let stand 10 minutes. Remove garlic, and serve warm or at room temperature.
