For a make-your-own meal, nothing beats baked potatoes with all the fixings. Set the table with sweet potatoes cooked in the microwave and the following toppings for a healthful feast the whole family will love. 
  • 1 cup silken tofu, drained and crumbled
  • 1 apple, such as Gala or Fuji, diced
  • ½ cup granola
  • 1 Tbs. maple syrup
  • ½ tsp. ground cinnamon
  1. Combine all ingredients in bowl.
