Tofu Bagel

This tofu mixture makes a flavorful topping for bagels. For zing, add more mustard, garlic or onion. Or choose an already flavorful bagel, such as Asiago cheese or sun-dried tomato. Adapted from The Bagel Bible: For Bagel Lovers, the Complete Guide to Great Noshing.
- 10 oz. extra-firm tofu
- ¼ cup nonfat mayonnaise
- 2 tsp. Dijon-style mustard
- ½ tsp. garlic powder
- ¾ cup diced celery
- ¾ cup diced green pepper
- 1 small onion, diced
- 1 Tbs. balsamic vinegar
- 2 bagels, halved
- 2 tomatoes, sliced, then sliced again into half-circles for garnish
