Tofuna Sandwiches
Makes 4 to 6
30 minutes or fewer
In medium bowl, crumble tofu. Add mayonnaise, celery and scallion if using and stir until well combined. Stuff mixture into warmed pita bread halves and serve.
- 1 large stalk celery, finely chopped
- 1 scallion (white and light green part), finely chopped (optional)
- 4 regular or 6 mini-size pita breads, warmed and cut crosswise in half
- ⅓ to ½ cup tofu mayonnaise
- 8-oz. pkg. baked marinated tofu

Love this recipe but I had to modify it significantly. I dislike processed foods, so I used plain tofu (that I microwaved for 3 minutes to firm up the texture) rather than the baked marinated tofu. I don't like the sodium and processing in a the pre-seasoned products. Other than that, it was a fantastic, quick lunch. I agree with the earlier comment about "tofu mayo". Definitely add a recipe for that or a link to an existing recipe. Also, the type of marinade for the "baked marinated" tofu is not included. That could ruin the recipe if a person chose the wrong type. that's another reason I chose plain.
