Tomato Soup with Fresh Herbs

Fresh tomato soup is easy to make with a hand-held blender. This version is bursting with flavor. If you don’t have an immersion blender, simply transfer the soup to blender or food processor instead.

Ingredient Line:
1 Tbs. olive oil
Ingredient Line:
¾ cup chopped onion
Ingredient Line:
2 cloves garlic, chopped
Ingredient Line:
1 Tbs. chopped fresh oregano or basil
Ingredient Line:
1 tsp. chopped fresh thyme or ¼ tsp. dried
Ingredient Line:
5 cups diced fresh tomatoes (2 lb.)
Ingredient Line:
1 ½ cups low-sodium vegetable broth
Ingredient Line:
2 ½ Tbs. tomato paste
Ingredient Line:
2 tsp. sugar

  1. In large saucepan, heat oil over medium heat. Add onion, garlic, oregano or basil and thyme and cook, stirring often, until onion begins to soften, about 5 minutes. Add tomatoes and cook, stirring occasionally, 5 minutes. Stir in broth, tomato paste and sugar. Season to taste with salt and freshly ground pepper.
  2. Bring soup to a boil. Reduce heat; simmer, uncovered, 15 minutes. Using immersion blender, process until smooth.
  3. Ladle into serving bowls and garnish with fresh herbs.

I made this tonight and paired with grilled cheese sandwiches made with Veggie Slices. A great vegan meal and very low in calories. This soup rivals Panera's tomato soup (that I love). Definitely making this again!

I don't bother with the immersion blender. This is a beautiful soup without blending, especially if you use a variety of heirloom tomatoes. I use agave nectar instead of sugar. Thai basil is a nice change from regular basil too. Serve on croutons and sprinkle with grated parmesan or romano cheese for a heartier serving. I've made it several times and everyone loves it.

This is amazing, my husband gobbled it up and said we should have it more often. I left most of the tomatoes in chunks we just preferred it that way.

This turned out great! Tomatoes grow wild in my unruly backyard and I end up having a bunch of tomatoes. I didn't have any fresh herbs so I used dried. I'll use this recipe whenever I have a bumper crop of tomatoes. Thanks for the recipe.
