Upside-Down Pear Gingerbread
Serves 12
This glistening cake gets its rich taste from spices and applesauce instead of butter.
Gingerbread
- 1 Tbs. unsalted butter, melted
- ¾ cup whole-wheat pastry flour
- ¾ cup all-purpose flour
- 2 tsp. ground ginger
- 1 ½ tsp. ground cinnamon
- 1 tsp. baking powder
- ¼ tsp. baking soda
- ¼ tsp. salt
- 1 large egg
- ⅓ cup sugar
- ⅓ cup molasses
- ⅓ cup unsweetened applesauce
- ¼ cup canola oil
- ⅓ cup plain low-fat yogurt
- ¼ cup packed light brown sugar
- ¼ cup chopped walnuts
- 3 pears, peeled, cored and thinly sliced lengthwise

This recipe is delicious. I've made it several times, each time adding a different ingredient, and it always turns out great. This time I use only applesauce and didn't put in yogurt or oil, and it work out perfectly. One of my favorite quick-bread recipes.
