Vanilla-Apple Yogurt Cups

- 16 oz. plain low-fat or soy yogurt
- 3 tart apples, grated
- 2 to 3 Tbs. honey or agave nectar
- 2 Tbs. lemon juice
- 1 tsp. vanilla extract
- ½ cup each chopped dried apricots, chopped pecans, and raisins
