Veggie Heroes with Herb Mayonnaise

½ cup soy mayonnaise
Ingredient Line: 
¼ cup minced fresh basil, dill and parsley
Ingredient Line: 
1 Tbs. minced fresh chives

1 tsp. grainy mustard
Ingredient Line: 
1 small clove garlic, minced (optional)

6 hero rolls (6 to 7 inches) preferably whole-grain
Ingredient Line: 
1 4-oz. pkg. soy deli slices, cut in half
Ingredient Line: 
2 cups shredded lettuce
Ingredient Line: 
3 medium tomatoes, thinly sliced
Ingredient Line: 
1 4-oz. jar roasted red peppers in water, drained and thinly sliced

Instructions: 

  1. Herb Mayonnaise: In small bowl, mix all ingredients until well blended.
  2. Split each hero lengthwise and spread Herb Mayonnaise over both sides. Divide deli slices among roll bottoms. Divide lettuce, tomato and pepper slices among roll tops. Sandwich heroes together and serve.

Lucy thanks for the link! His reepcis look and sound delicious! I used to be vegetarian then vegan then vegetarian, but I was far from healthy and was feeling horrible. Takes a lot of work to be vegan until you really get the hang on it and it becomes second nature! I'm thinking of cleaning up my diet and scrapping one animal product for good and slowly go from there. Much easier than deciding to eat a vegan raw diet overnight! LOL
