Warm Lemon Pudding Cakes with Blueberry Compote

These little cakes, based on an old Amish recipe, bake into two layersone creamy and the other cake-like.

- 4 Tbs. unsalted butter, softened
- ¾ cup sugar, divided
- 1 tsp. lemon zest
- 3 large eggs, separated
- ⅓ cup all-purpose flour
- ⅓ cup lemon juice
- 1 ¼ cups nonfat milk
- 2 cups frozen blueberries
- ⅓ cup sugar
