Zucchini-Goat Cheese Pizza

Cheese pizza is a perennial veg favorite, but it often comes with a hefty calorie count. Here, goat cheese and thinly sliced veggies offer lighter alternatives to shredded mozzarella.

2 Tbs. olive oil, divided

8 oz. (½ pkg.) prepared refrigerated pizza dough

1 3.5-oz. log goat cheese, thinly sliced or roughly chopped

1 zucchini, peeled into thin strips

1 small red bell pepper, cut into rings

1 6-oz. can no-salt-added tomato paste
Ingredient Line: 
2 Tbs. finely minced onion
Ingredient Line: 
2 cloves garlic, minced (2 tsp.)

2 tsp. dried oregano
Ingredient Line: 
2 tsp. olive oil
Ingredient Line: 
½ tsp. red wine or red wine vinegar

Instructions: 

1. To make Pizza: Preheat oven to 450°F. Brush large baking sheet or pizza pan with 1 Tbs. oil. Spread pizza dough in prepared pan.

2. To make Sauce: Stir together all ingredients with fork in small bowl.

3. Spread Sauce on dough. Top with half of goat cheese. Spread zucchini strips over goat cheese, 
top with bell pepper rings, then remaining goat cheese. Drizzle with remaining 1 Tbs. oil. Bake 10 to 15 minutes, or until cheese is melted and bubbly. Cool 10 minutes, then cut into 6 slices.

We eat pizza weekly and I make my own dough. This is a delicious combination that is not drenched in greasy cheese. Love it!

This is a great little pizza recipe. My boyfriend is still raving about it a couple days later. We are planning to repeat it next Friday night in fact. I may try my own pizza dough if I have enough time, but the recipe 'as is' is just great!

Made this last night – but subbed feta cheese for the goat cheese log (I couldn’t find this) and used a pre-made whole wheat crust. YUMMY!!! And so easy!

My wife and I have made this recipe every week since it was published! We've even added Tofurky "Vegan" Italian Sausage for protein and it tastes like something you would get at a high end artesian pizzeria. WOW!

I don't like goat or feta cheese. I thought I would try a vegan cheese. Anyone done this yet with any luck? I want something that melts well. What did you use?

All processed ingredients, from the artificial goats' cheese log to tomato paste and possibly the prepared pizza dough! These are all things that can be made at home!
