Orange-Date Oat Bars

These bars will satisfy your sweet tooth without sending you on a sugar high.
Directions
1. Preheat oven to 350°F. Spray 9-inch baking dish with nonstick spray.
2. Simmer juice, dates, zest, 1/2 tsp. cinnamon and 1 cup water 15 minutes over medium heat, or until thickened.
3. Pulse oats, flour, sugar, baking soda, salt and remaining cinnamon several times in food processor. Add shortening, and blend until combined.
4. Press half oat mixture in prepared pan. Top with date mixture. Add pecans to remaining oat mixture. Press on top.
5. Bake 50 minutes, or until top is golden brown. Cool, and cut into bars.

- 1 1/3 cups chopped dates
- 1 Tbs. grated orange zest
- 2 1/2 tsp. ground cinnamon
- 1 1/3 cups old-fashioned rolled oats
- 1 1/4 cups all-purpose flour
- 1 cup packed dark brown sugar
- 1/2 tsp. baking soda
- 1/2 tsp. salt
- 3/4 cup nonhydrogenated vegetable shortening
- 1/2 cup chopped pecans

After grating the zest of two oranges I made and added fresh squeezed OJ to these delectable bars. Personally I think a full cup of brown sugar is too much...next time I am going to use 2/3 cup packed and I think I'll add rhubarb to the date mixture too.
I enjoy reading Veg Times ... but I have to say ... a healthy snack does NOT include 24 grams of simple sugar. I baffles me why VT touts recipes like this as "healthy" alternatives. Tarnishes your rep!!!
a full cup of sugar??? This is supposed to be healthy???
Too much sugar and "all-purpose four'. Surely there is something better out there? Oat perhaps?
