Roasted Maple Pecans

Vegetarian Times Issue: January 1, 2006   p.61

You can nibble on these crunchy sweet pecans out of hand, or sprinkle them on just about any dessert you can think of. Try them on baked apples or with fresh pears or as a topping for frozen soy desserts. The nuts will keep in an airtight container at room temperature for up to 3 weeks.

Directions

  1. Preheat oven to 350F.
  2. Combine all ingredients in small bowl, and toss to coat. Spread pecans on parchment- or foil-covered baking sheet. Bake 20 to 30 minutes, stirring every 10 minutes, until sugar is caramelized. Set pan on wire rack, and let cool 10 minutes. Break apart any nuts that have stuck together, and serve.
