Vegan Snickerdoodles

Vegetarian Times Issue: September 1, 2007   p.79

Snickerdoodles are just sugar cookies rolled in cinnamon sugar. Try adding 1/2 teaspoon ground nutmeg or allspice to the cinnamon sugar to boost flavor.

Directions

1. Preheat oven to 350°F. Coat baking sheet with cooking spray.

To make Cookie Dough:

2. Whisk together flour, cornstarch, and baking powder in bowl. Beat margarine in separate bowl with electric mixer until soft. Add sugar, and beat until fluffy. Beat in soymilk and vanilla extract 30 seconds or until smooth. Add flour mixture, and beat 30 seconds or until smooth.

To make Cinnamon Sugar:

3. Combine sugar and cinnamon on large plate.

4. Shape dough into 1-inch balls. Roll each ball in Cinnamon Sugar, and place 1 1/2 inches apart on prepared baking sheet. Bake 10 to 12 minutes, or until cookies look dry on tops and are lightly browned on bottoms. Transfer to wire rack to cool. Store in airtight container.

  • 1 stick (4 oz.) vegan margarine, softened
  • 3/4 cup sugar
  • 1/4 cup vanilla soymilk
  • 1 tsp. vanilla extract

  • 1/2 cup sugar
  • 3 Tbs. ground cinnamon

Easy...I'm not sure it makes 45 cookies, though. I made them into 1-inch balls and only got a little over 2 dozen.

Good recipe, but I think the yield is wrong. I didn't get anywhere near 45 cookies. I made them into 1-inch balls as directed in the recipe and got about 2 dozen.

I used half whole wheat flour and rice milk; and added ginger and nutmeg to the sugar mixture and these are sooooo scrumptious!! I doubled the recipe and definitely go plenty that way!

I got about 38 cookies, but made them a bit smaller than 1 inch. So good! I mixed a little Dagoba Chai drinking chocolate powder in with the cinnamon/sugar mix.

This dough was impossibly dry. I tried to pick up any amount of cinnamon sugar with it, but the dough would simply not work. The mix is off. I wonder if you mixed up the 13/4 flour? What a weird decision to measure your flour in fourth cups. I added liquid to try and help it, but it was lost and not to be revived.

To the person who said that the mix is wrong, it's actually 1 cup and 3/4 of a cup. Not 13/4. :P I made these and they were a huge hit. I'm going to make them again and again!

i have allergies to milk and eggs and so far these are the best cookies i have tried since i gave up milk and eggs, but they did not make 45, more or less 2 dozen.

these cookies, i admit, were very scrumptious; but i must say that they are a little sticky when i was putting them on the baking sheet (i found out that it is possible to freeze the dough for latter use)to my surprise i could find no way to stop them from being sticky

Not a vegan or a cook but had to bake for family. Not bad tasting however I added chopped walnuts to some and dried cranberrie. It only made 2 dozen cookies. The person that got cake batter probably didnt whisk it enough cause I was thinking the same thing but it did even out eventually. Easy recipe with few ingredients.
