The secret to this recipe is double-frying the tofu cubes to give them an extra-crisp exterior. We've added a selection of sautéed vegetables to the mix, but feel free to adapt the basic recipe to your tastes and preferences. This recipe was a winner in our 2008 Restaurant Poll, and is a popular entrée at The Grit in Athens, Georgia.

Directions

1. Heat 1 Tbs. oil in large nonstick skillet over high heat. Add tofu, and sauté 10 to 15 minutes, tossing with spatula, until light golden brown all over. Sprinkle with soy sauce, and sauté 2 to 3 minutes more to further brown tofu. Transfer tofu to paper-towel-lined plate. Drain and rinse skillet, and wipe dry.

2. Heat remaining 1 Tbs. oil over high heat. Add tofu and all vegetables. Sauté 5 to 7 minutes, or until tofu is browned and vegetables are tender, tossing constantly with spatula. Sprinkle with soy sauce to taste. Sprinkle nutritional yeast over tofu to coat. Sauté a few seconds more. Remove from heat. Serve over brown rice.

  • 2 Tbs. vegetable oil, divided
  • 15 oz. extra-firm tofu, drained and cut into 1/2-inch dice
  • 2 tsp. low-sodium soy sauce, plus more to taste
  • 2 cups steamed broccoli
  • 8 oz. sliced mushrooms
  • 1 cup finely chopped onion
  • 1 cup diced yellow bell pepper
  • 1 cup sliced yellow squash
  • 1/2 cup shredded cabbage
  • 1/2 cup grated carrots
  • 2 Tbs. nutritional yeast, or more to taste
  • 2 cups cooked brown rice

It is yeast that you can actually eat. Go to a health food grocer such as Trader Joe's or WholeFoods and it's normally located in a bin and sold by pound.

There is no subsititute for nutritional yeast... it's a must have.

you can only get it at health food stores. it is used in recipes to give a tangy parmesan flavor. vegans use it as a cheese substitute in recipes. stacie is right, there is no substitute for nutritional yeast.

I have been a vegetarian for over a decade and just recently tried nutritonal yeast. It's actually pretty tasty and Dana is right: almost any health food store will carry it. I definitely want to make this recipe!

Nutritional yeast is divinity. It MAKES this dish. I always coat the tofu in 1/4 cup of it before cooking, and then sprinkle on more as I eat. I have tried the sauteed version of this & in the end opted for baking the tofu cubes in the oven. 400 (15 with just the oil coated, 15 with added soy sauce coat, 15 with nutritional yeast coat). The vegetables are a must, and at the Grit you can opt for a slice of melted cheese on top which is never a bad decision. I make this about once a week.. brings me back to my sweet college days in Athens, GA.

Nutritional yeast (aka "brewers yeast" is one of my favorite foods. I eat it a few times a week and sprinkle it on many things. It's especially great over pasta or popcorn, with flax oil.

Nutritional yeast and brewers yeast are two different things. Nutritional yeast is available in the baking aisle of Whole Foods Market, if you have one near you.

You can buy nutritional yeast by Braggs from Kroger if you have a kroger grocery store, however be careful of what you get if you don't get Braggs, i don't think all NY is vegan, but theirs is.

I'm confused. It says to mix the tofu and vegetables for the second frying, and then to coat the TOFU with the yeast and fry some more. Does this mean separating out the tofu from the veggies for the third step? Huh?

No, you cannot substitute brewers yeast for nutritional yeast. They are very different. Brewers yeast has a bitter flavor.

Amy, No, after the second frying don't separate. I have made this numerous times. It seams a lot of people are over thinking it.This is a really easy quick and simple recipe. Whatever veggies you use will be great. But be sure to have the Nutri. Yeast. It IS the flavour of this dish and there is NO subbing this one. Keep Nutritional yeast handy at all times. It's so good for you and great on popcorn in mac and cheese,etc.

Just made this dish and it was wonderfully fresh, and filling. I coated the tofu with corn starch when I fried it and I liked the crispy texture. I omitted the Nutritional Yeast and it didn't dampen the flavor. This will definitely be a fav with me.
