Avocado Chimichurri Bruschetta
Vegetarian Times Issue: September 1, 2008 p.84
Talk about a fusion of world cuisines! Cubes of avocado are folded into chimichurri—an Argentinean sauce made of chopped parsley, cilantro, garlic, vinegar, and oil—to create a Latin variation on bruschetta, a classic Italian starter.
Directions
Combine lemon juice, vinegar, garlic, salt, red pepper flakes, oregano, and black pepper in small bowl. Whisk in oil, then stir in cilantro and parsley. Fold in avocado cubes. Spoon avocado mixture onto toast slices, and serve.

This is one of my FAVORITE recipes! Everyone loves it!!
We tried it and loved it... made it AGAIN 2 days later... this is by far one of the best recipes I've tried in a while!
One of my favorite combinations! My favorite restaurant serves an avocado chimichurri wrap: grilled tortilla filled with avocados, chimichurri sauce, lettuce, tomatoes, and jack cheese. Delicious!
I like the look of this burrito. I am doing a grilled corn, garden tomato, cumin, lime juice, refried beans, grilled orange bell pepper, black pepper& green onion filling in english flour tortillas tonight (with high-test hot sauce for me). Viva la...South-West!
What a delightful combination! Could eat this for days!
Everytime I contribute this to the spread at a party, it is a hit! The flavor combination keeps people coming back. Be prepared for requests for the recipe.
This is Great!
This is an excellent recipe. One of my favorites! Everytime I bring it to a new event, I get so many requests for the recipe that I now have it memorized.
