Sweet Potato Salad with Apple and Avocado

More a meal than a side dish, this potato salad gets its protein from avocado and pumpkin seeds, both good sources of essential fatty acids. Nutrient-rich corn and diced apple give it crunch. Try serving it over a bed of spinach or arugula.
Directions
1. Place sweet potatoes in large saucepan, and cover with water. Bring to a boil, and cook 3 minutes. Add corn, and cook 1 to 2 minutes more, or until potatoes are tender. Drain in colander and rinse under cold water to cool. Drain well.
2. Toast pumpkin seeds in dry skillet over medium-high heat 3 to 4 minutes, or until seeds begin to pop. Transfer to plate, and cool.
3. Combine apple, onion, cilantro, and lime juice in large bowl. Stir in sweet potatoes, corn, and oil, and season with salt and pepper, if desired. Stir in avocado and toasted pumpkin seeds just before serving.

- 1 cup frozen corn
- ¼ cup unsalted hulled pumpkin seeds or pepitas
- 1 medium red apple, diced (1 cup)
- ½ small onion, finely chopped (½ cup)
- ¼ cup chopped cilantro
- ¼ cup lime juice
- 2 Tbs. olive oil
- ½ avocado, finely diced

So delicious! I served it over mixed greens as a first course. Everyone loved it. Don't skip the pepitas--the crunch is a great addition.
Great salad. Very different from the usual "salad". I made it for a pot luck and several people asked for the recipe.
This salad turned out great. I was a little skeptical about the combo, but once the pepitas and avocado are mixed in it comes together amazingly well. I was fortunate to have 3 different kinds of sweet potato at my grocery store too! I added a shot of Bragg (I do to almost everything) and next time I think I'd add more apple, but VT's favorite recipes have yet to disappoint. This even tastes great the next day!

I, like others, was skeptical about the ingredient combination. Sweet potatoes, apples, and avocado? Really? But it actually is quite delicious. I think it's the lime juice that pulls it all together. I didn't have pumpkin seeds to put on, but I'm sure that's what makes it truly excellent. A crunch would have been nice.
Love it! Instead of pepito, I used cashews and added dried cherries as well.

Soooo yummy! I was not doubting that it would taste good, but I had no inkling that it was going to taste THAT good!
I only made half the recipe, as my husband is not always helpful in eating leftovers...even when they are yummy...=-) But I won't mind hogging it all!
As I have an aversion to Cilantro, BIG time, I switched to parsley as usual, and it was divine. Great recipe. High Marks! To round out my meal, I had a vegetarian sausage patty with it...

Delicious! Great way to get a mix of healthy fruits and veggies. I took another poster's suggestion and added dried cherries. I also substituted basil for cilantro and that seemed to work well.
I love this dish, and it really is a meal. Just be careful not to overcook the sweet potatoes and to not add the avocado until you serve; otherwise, it can turn into a mix of mush (albeit still tasty though).
Pepito = pumpkin seed. Loved this recipe, great for a picnic. I used Cortland apples because they don't brown very quickly plus sweet and crunchy.
I love this recipe! I've made it several times, and it's always a hit! I even made it for Thanksgiving last year, and added dried cranberries to the mix. Love it! The lime juice dressing is fresh, tangy and healthy at the same time!
We love this. It is a meal. I made some cold melon soup with it and they were both so refreshing. The pumpkin seeds were a great addition and I think I'll try the dried cherries.
I made this for dinner last night. So delicious and so easy! The combination of ingredients is not anything I would have come up with on my own. I served this over arugula. We ate fresh mango and oranges on the side to round out the meal. I didn't have any pumpkin seeds so I substituted toasted walnuts instead. I might even try this with green onions rather than the regular onion next time. A winner for sure! PS - I just bought the VT cookbook "Everything Vegan" and found this recipe in there.
