Raw Chocolate-Chia Energy Bars

Whole chia seeds add nutritional punch and crunch to these chocolate treats.

Directions

1. Place dates in bowl of food processor; purée until thick paste forms. Add cocoa powder, chia seeds, and vanilla and almond extracts, if using. Pulse until all ingredients are combined. Add almonds; pulse until nuts are finely chopped and well distributed through date mixture.
2. Spread large sheet of wax paper on work surface, and dust with oat flour, if using. Transfer date mixture to wax paper, and use paper to press mixture into ı/2-inch-thick rectangle. Wrap tightly, and chill overnight.
3. Unwrap block, and cut into 8 bars. Dust edges and sides with oat flour, if using, to prevent sticking. Rewrap each bar in wax paper.

  • 1 1/2 cups pitted dates
  • 1/3 cup raw unsweetened cocoa powder
  • 1/3 cup whole chia seeds, such as ReNew Life Ultimate ChiaLife
  • 1/2 tsp. vanilla extract, optional
  • 1/4 tsp. almond extract, optional
  • 1 cup raw slivered almonds or raw shelled pistachios
  • Oat flour for dusting, optional

This recipe rocks!! It is so easy to make and really demystifies "raw" food for me.
The bar tastes better than any commercial raw bar on the market.

This recipes does taste great! I have been a loyal buyer of those awesomely expensive green chia (chocolate-dipped) bars, but this recipe is great, almost the same and you can add your own green powder to the recipe to make it similar.

My kitchen is being re-done right now, and I can't believe all I needed was my *extremely* small and cheap food processor I bought at the drug store, and the ingredients.

Also, I was skeptical about no salt but they taste great! Better than the ones I buy for almost $3 a pop.

Cool. Now, to dip in chocolate or not? Now that summer's here, and there's yummy cocoa inside, doesn't really need it - but I might try anyway! Thanks for the great awesome recipe!

Horrible to make! it broke 2 of my food processors.What a waste of money for the ingredients. Very disappointed

These, for me, turned out super crumbly. The flavor was great, but the bars did not stick together at all!

I added a little water to the mix, to help it stick better. Tastes awesome, my 8 year old loves to eat them. Very filling.

1/3 cup of water really did the trick. I wonder if the original recipe called for fresh dates?
