Cranberry Muffins

Directions

  1. Preheat oven to 375°F. Coat 18 muffin pan cups with cooking spray. In medium bowl, mix flour, cranberries, sugar, baking powder, baking soda and 1/2 tsp. salt. Make well in center of mixture. In small bowl, mix milk, ricotta cheese, orange peel, orange juice, oil, egg whites and egg. Pour into well in flour mixture, stirring just until moist.
  2. Spoon batter into cups. Sprinkle with sugar. Bake until toothpick inserted into center comes out clean, 20 minutes. Remove from pans and cool on wire rack.

  • 1 1/2 cups fresh or frozen cranberries
  • 1 cup granulated sugar
  • 1 Tbs. baking powder
  • 1 tsp. baking soda
  • 3/4 cup 2% low-fat milk
  • 1/3 cup light ricotta cheese
  • 1 Tbs. grated orange peel
  • 1/2 cup orange juice
  • 2 Tbs. vegetable oil
  • 2 large egg whites
  • 1 large egg
  • Granulated sugar for dusting

Simply delicious! I switched orange juice with grape juice and the result was less sweet, which was what I was going for.

Too many of your recipes contain animals products: milk, cheese, butters, etc. also oils, refined sugars and flours. These are not healthy products.
At least offer the healthy substitutions as options. Science has proven the above to be part of the SAD (Standard American Diet) that is the cause of the major diseases in the western world and any of the other countries that are eating such. Thank you

many recipes with refined flours and sugar and so forth can be found any where.

continued- as a vegetarian magazine, I was hoping to find more alternatives for these common ingredients.
Also I was hoping to find the methods to use the more healthful alternatives.

If you look at the nutritional information provided with Vegetarian Times recipes it's clear that most of them use ingredients like refined sugar, flour, milk, cheese, butter and oil quite in moderation.
The problem with the SAD is not the presence of these foods but the excessive consumption of them.
None of the foods are harmful in and of themselves unless one is allegric to them. With prudent use and portion control all can be part of a healthy, nutritious diet. Ask your physician or registered dietian.
