Cornmeal-Fruit Pudding

For this cold-weather dessert, you may use one or many types of dried fruits—even pineapple and mango—to suit your fancy. For the main meal, consider something homey such as vegetarian baked beans and coleslaw with a lusty lentil soup to start. You might want to offer mugs of chilled beer or conversely, hot espresso.

Directions

  1. Bring apple juice to a boil in large saucepan. Add honey, if desired, and stir in vanilla extract.
  2. Stir in grits gently, reduce heat to low, cover and cook, stirring occasionally, until grits start to thicken. Stir in chopped fruit. Remove from heat, and allow grits to firm.
  3. Spoon into dessert bowls, top with yogurt and garnish with nuts.

  • 2 cups apple juice
  • 1 Tbs. honey, optional
  • 1 tsp. vanilla extract
  • 1/2 cup quick-cooking grits
  • 8 oz. mixture dried fruit, coarsely chopped
  • 6 oz. soy yogurt
  • 1/2 cup chopped pecans or walnuts
