Fava Bean Salad with Feta

Vegetarian Times Issue: April 1, 2004   p.27

Readily available at most supermarkets, canned fava beans are natural partners for the popular Mediterranean feta cheese. Select your favorite creamy salad dressing, and complement this light, easy-to-assemble dish with a quick bread or toasted English muffins. Serve fruit for dessert.

Directions

Combine all ingredients in a large salad bowl. Toss with your favorite dressing, and serve.

Wine Suggestions
The flavors of this salad are accented by the sharp, tangy feta, so try a dry white, perhaps a Sancerre. The Petite Fontaine Sancerre is terrific with plenty of citrus hues
