Garam Masala Green Beans

Vegetarian Times Issue: October 1, 2006   p.60

Vegan              30 minutes or fewer

Garam masala (literally, “hot spice”) is an aromatic blend that includes cinnamon, cloves, nutmeg and cardamom. A little bit goes a long way and adds a delicious flavor to this simple dish.

Directions

  1. Combine oil, garlic, garam masala, mustard seeds, green beans, salt and 1/4 cup water in large skillet. Cover, and simmer over medium-low heat 5 minutes, or until beans are just tender.
  2. Uncover skillet, and increase heat to medium high. Cook 3 minutes, or until liquid has evaporated. Sauté 3 minutes more, or until beans start to brown. Remove from heat, stir in lemon juice, and serve.
