Cinnamon-Apple French Toast
Vegetarian Times Issue: October 1, 2006 p.38
Vegan 30 minutes or fewer
Tart apples like Pippin, Empire, Winesap and Granny Smith retain their shapes when cooked, so choose them for this recipe.
Directions
- To make Topping: Coat nonstick skillet with cooking spray, and heat over medium-high heat. Sauté apples 5 to 7 minutes, or until softened. Reduce heat to medium. Add sugar and cinnamon, and cook 5 to 10 minutes more, or until tender, stirring occasionally. Stir in lemon juice, and remove from heat.
- To make French Toast: Blend soymilk, apple butter, vanilla, cinnamon and salt in blender until smooth. Pour into shallow bowl.
- Coat nonstick skillet with cooking spray, and heat over medium heat. Dip bread slices into batter, coating evenly. Cook 2 to 3 minutes on each side, or until lightly browned. Place 2 slices bread on each plate, and divide topping among servings.

Its really Good!
I'm the only one in my fam who is vegan-and my fam didn't even know the difference! They want me to keep the recipe-and it burts flavor! Absolutely delicious!
Can't get enough of your vegan recipes. I surprise my husband with vegan substitutions and your fabulous vegan recipes!!! Love, love your magazine and e-mails. Thanks so much and keep up the great printable recipes.
AMAZING...my family has forced me to make this THREE TIMES in just 2 weeks...a couple of recommendations:
Increase cinnamon according to your preference...adds to the flavour...also, i found that using vanilla almond milk was best (i tried rice and soy) and the most important piece of advice:
USE MULTIGRAIN BREAD! We used organic multi grain baked at our local bakery...anything with plenty of seeds...it def. made the recipe for us...also...i would recommend using more apples...YUMMMYYYY
My daughter made this for me and it was wonderful
I wasn't a vegetarian at the time.
I bought a loaf of "lemon white chocolate" bread and used it for the french toast - decadent!
