Gluten-Free Recipes
A gluten-free diet avoids any ingredients that contain wheat gluten, such as wheat (durum, graham, kamut, semolina, and spelt), rye, barley, and triticale; any gluten-derived food additives; and products that may be contaminated with gluten (such as oats). People who choose to adopt a gluten-free diet have often been diagnosed with a wheat allergy or celiac disease, a disorder of the small intestine that affects about 1 out of every 133 Americans according to a study published in Archives of Internal Medicine. Of course, you don’t have to be sensitive to gluten to enjoy nutritious and delicious gluten-free dishes.
Vegetarian Times offers a plethora of gluten-free recipes in each issue, including recipes that highlight the most flavorful and healthful gluten-free grains, such as quinoa and buckwheat (which, despite its name, is not related to wheat).
