Sarah Murphy - 2013-04-29 13:33:26I am a vegetarian by birth. I am big time into eating healthy the last 4 years. So vegetarian recipies are very simple and cost effective. I make my meal with Quinoa. I saute onions, tomatoes and other veggies, whatever I have and add quinoa, salt little curry powder or cumin powder and add water and cook it on the stove for 10-15 mins. It is delicious. You can add any vegetables and if also any canned beans, it taste awesome. Hope this helps

Opaka - 2013-03-14 15:20:06I became a vegetarian 2 years ago, and was never very intentional about my protein intake. Although I eat a wide variety of plant foods, and occasionally eggs, I started to develop edema of the lower extremities. Despite the fact that I am an RN I failed to recognize my symptoms, coupled with the fact that I am a marathon runner, may indicate protein deficiency. Finally a young resident at the hospital clued me in :), I added a protein supplement, and am now being much more committed to my nutrition as a whole. Veg Times is a great asset!
annie Schueppert - 2013-02-02 00:31:26I started to become a vegetarian or maybe I should say vegan about five months ago. The only thing that I haven't given up is honey, and eggs. I'll cook egg whites that comes in the container because I find it more healthier. Other than that, I cut out all meats from my diet. The problem that I'm having is trying to find foods to cook that doesn't cost that much or simple breakfast, lunch and dinner ideas. I love being healthy but finding the right kind of food is important for me. If anyone have ideas they could share with me regarding meals that would be great or even simple vegetarian recipes. By the way, no Tofu. Anything that doesn't require or consist of having Tofu in the food would be good.

And I do really love fruits, veggies, and grains &Eve legumes and am looming for recipes that have all the and are filled with the good nutrients and vitamins I need. Also I really want to boost my immune system so I don't get sick so often

Agatha - 2012-12-13 04:08:12To everyone getting started: Being a vegetarian is very easy, and can be easy on the wallet, too. Frozen veggies are always cheap and easy to cook. Soups, pasta, and stir-fry are among the easiest and cost-effective meals to make. My particular favs are spicy black bean burgers, which can be microwaved. Oatmeal and cereal are great for breakfast. Nuts, hummus, tricuits, and apples are my favorite snacks. Been vegetarian for several months, and so far, I love it! My waist has shrank and my complexion has cleared almost completely. I also have more energy, even on days when I don't sleep well. Despite working 2 jobs and going to school full-time, I've found plenty of meals that take under a half hour to prepare. You've just gotta think creatively and browse the recipes on here. I am in college right now though, so I'm afraid I'm not going to have much diversity in food. Also, I'm afraid I'm not going to get all of proteins, vitamins, etc. that I need. Should I start a vitamin supplement?

So...I'm not so worried about getting enough protein...just worried about getting the right amount of calcium. I don't eat that much dairy, and I also don't want to gain weight!
